Sorry for the delay in getting back to you, I updated to version 7.1 yesterday 
and was busy making friends with the new upbeat Siri!

Now, for some of your questions: quick capture is the  way to go if you want to 
see what information you've got on your piece of paper or two OC are it and 
send it off to another app. It is the most straightforward of your options and 
I tend to use it more often than not. Yesterday, for example, I sent a small 
extract from my newspaper which I had obtained with the use of Prizmo and the 
quick capture mode. I just used the copy function and then pasted it into the 
bottom of my email. So, this wasn't something I wanted to keep but merely to 
use. I could have kept it for sure, I could have sent it to another app, pasted 
it into an email, as I did, all, I am sure, there are many other options. 

As for the create new document mode, I use this if I want to make a multi page 
copy which I want to be able to read page by page consecutively as if it were 
one file. It is also easier and quicker to use the multipage documents because 
you can just keep replacing the page and taking another shot, particularly well 
suited to the use of the stand Scan pro. You should play with this mode. 
However, a small caveat for you, it will depend upon your needs, you mentioned 
you will need to OCR some forms etc, now, I did this last year: firstly, I 
needed to read the content of the forms, so, I OC are then. And then I needed 
to create image files of them because I needed to sign the final page and email 
them back to the original sender. To do this one needs to choose image rather 
than text. Once a document has been OC ared it will not look at all like the 
original document. All formatting is gone etc. So, if you need to keep copies 
of forms etc just take an image copy and not a text copy. In this particular 
case, I created two different documents with Prizmo. One which was in text 
format which has been recognised so I could read it, the other simply an image 
file which I could not read that I needed to keep a copy off. Finally on the 
page by needed to sign, I signed the original paper document took an image copy 
of it and could post it sorry email it back to my original sender. Does this 
make sense?

I know you have many more questions but perhaps this is enough to get to 
practising and defining what it is you actually need to do with your documents. 
Something important to note, within the space of a couple of days, you, have 
become a power user of Prizmo and this is due to the efficacy of the stand 
ScanPro, something worth observing, I think.
