Yes, this is possible. You want to use the pinch gesture. Find the text you want to copy, place two fingers on the screen near each other and then spread them apart. This will select text. You'll select by characters, words or lines depending on your roter setting. After you've selected the text you want, use the roter to find the edit option, flick up or down to copy and then double tap. Now go to the app where you want to paste the text, again use the roter to find the edit option and flick up or down to paste and double tap. There are podcasts out there on this and better descriptions than what I've provided have been posted to the list, so you should be able to search the web or the list archives to find them.

You can also use a three finger quadruple tap to copy the last thing VoiceOver spoke to the clipboard.
