To add to what has been said below, backlighting also comes in handy for
those times when we need to ask a sighted person for help such as when there
is no speach or when we're not sure how to navigate in an app which is
hardly accessible.

You can turn screen brightness to 0% that will be as low as you can go.
Backlighting may not do anything for a blind person, but I think you forget
that the iPhone or, for that matter, the iPad and iPod Touch are not blind
specific devices. They are among the most popular off-the-shelf mobile
devices in the entire world and Apple has taken the lead in making them
accessible to an extend which I think has never been seen before for
anything else.
There are of course also those visually impaired users who still have enough
useable vision to supplement their Voiceover experience or to use the device
completely without Voiceover and for them of course good brightness and
contrast along with large text are essential.

What does the screen light do for those blind folks with no light
perception?  Makes no sense for the screen or blacklighting to eat up
battery current!  That is crazy!
