Yes, but I hink Todd's problem is that even if he had no signature his text might still show at the bottom of a thread.
So, here is what to watch out for on the iPhone. If you double tap to bring focus into the text body field, your cursor will be at the beginning of any text that is there including your signature. If, however, you double tap again, focus will jump to the very end of the edit field and in the case of an email message body field, this would be at the end of all messages in the thread. If you want to make sure where you are, just double tap and listen to what Voiceover says, it will say either "Insertion point at end" or "Insertion point at start". Obviously, Insertion point at start is what you want so that your text shows up before anything else. Each double tap in the edit field will toggle between start and end.
