One minor correction. As the call is being initiated from an iPod Touch, you'll want the Contacts app - there is no Phone app. Other than that, you are correct - choose the contact, double tap "FaceTime" (or FaceTime Audio), and off you go, assuming you've saved the same email address or phone number that Apple has.
