I downgraded my iPhone to iOS 7.1.2 on Sunday and then did the iOS 8 update again via iTunes. I told it to first only download iOS 8 and not download and install and it relatively quickly told me the download would take 5 hours. Since I had other stuff to do I just let it sit there and it probably did take the full 5 hours, didn't really check, but it did finish downloading eventually and then the update went smoothly.
