I assume you could turn the Iphone so that it is edge on to you so it would represent the level to you and away from you. I have never thought about this til now. I just tried laying my phone flat on a table and then lifting each of the 4 sides slightly and it does seem to give level readings on all side. I am unsure how to interpret this but maybe you can figure it out.
