You can either do it the old way which is to go into some sort of edit field and then turn the rotor until you get to typing mode and flick up/down to select the one you want or new in iOS 8 you can now also set your default typing mode in Voiceover settings. Just after Rotor you will find what Voiceover announces as Typing Style followed by whichever style is currently chosen, standard, touch typing or direct touch typing. Double tap and you can select the one you want. If you want a very nice demonstration as to what direct touch typing is all about and how it works, check the Applevis website, the most recent or at least one of the most recent Podcasts was about direct touch typing and it was very well explained and demonstrated.
