You're right in that the 8 prefix supercedes the 7 and all other prefixes. 7.1.2 was the last of those and worth sticking with until you feel comfortable enough to chance 8. That is almost certainly as far as you should ever take a 4S; and if it's working Ok now and you don't need more new or updated apps, there's no real reason to update it at all really.
