I was able to find some good documents on setting up and using an iPhone. One of them is concerned with setting the iPhone up for iOs 7, but the information in it is still useful. The other text I got is Jonathan Mosen's book on iOs 8 Without The Eye. They're not free, but for me they're worth the cost.
