Although I'm sure there is a way of configuring VNC to listen to a
particular interface (or rather IP), you may also want to consider as a
solution to apply TCP/IP filters to not accept connections on particular
ports e.g. 5800/5900 on the particular interface. 

Another solution is to install a software firewall such as ZOneAlarm and
configure appropriately.
