I use OSXvnc <http://www.redstonesoftware.com/osxvnc> and it works great. I start it with a command line after shelling in:
/Applications/Utilities/OSXvnc.app/Contents/MacOS/OSXvnc-server -rfbport 5901 -allowsleep -swapButtons -desktop MacOSX -rfbauth ~/Library/Application\ Support/OSXvnc/osxvnc-passwd 2>> ~/Library/Logs/OSXvnc.log &


That's all on one line, mind you. The password file is copied from /tmp from when the GUI created it, and the log file is for auditing. I'd recommend also keeping the port closed on your outside firewall and configuring ipfw (if you are savvy enough) to accept localhost connections only on the VNC port. Then you shell in with ssh and open a tunnel to use VNC.

I use it daily, and it functions beautifully. The only trouble is, I can't get anyone to recompile the Win32 client to send Meta key-down, to correspond with the Macintosh Option key...
