Patrick, It sounds like the Mac OS X VNC-based server that you are using is either not fully compatible with the VNC standard, or has some bug in handling security methods.
As I suggested in message 053336 (http://www.realvnc.com/pipermail/vnc-list/2005-December/053336.html), you should run VNC Viewer from a Command Prompt, with the "-console" and "-log=CConnection:stderr:100" command-line options. This will cause VNC Viewer to print out the protocol version and security methods being offered by the server, which may indicate what it is doing wrong.
