Been there.... Done that... and we still are. Yes we had to setup additional smtp servers to force mail to go through Postini. If you receive a large amount of spam Postini is the way to go. They have saved us thousands in what it would have cost us to have a server robust enough to handle the amount of spam we were receiving. We do host multiple domains and not all of our users have changed their smtp settings. I've got an idea about trying to force delivery to our smtp servers (or in your case Postini) using the router but haven't had the time to try it. I will let you know if it works.
