That's an infrared sensor. I agree those things are nifty, but I think that in addition to that it would good to use a direct contact thermocouple such as the one Jones Beene recommended. Use both! Suspenders and a belt. The infrared sensor is great because you can easily move it from one spot to another to check for temperature homogeneity. - Jed
