How does one calculate the margin of error  for the temperature?

When I look at the calibration data, I can calculate the standard deviation between the temperatures for the entire calibration run at 1.5%. If I compare the difference in the thermocouples during the actual run, then 50c difference is between 3 and 4 standard deviations from the calibration, and 60c, (which occured for a few minutes), is over 4 standard deviations from the calibration.

Is this the correct way to calculate error?
