Yes. People were able to control complex systems such as forging iron and
making wine for thousands of years without knowing how these things work.

On the other hand, I read that in the last 50 years, more progress has been
made in wine production and quality control than in all of previous
history. Having comprehensive knowledge of the underlying process is a big
help, but it is not always necessary.

Naturally evolved biological control systems such as the endocrine system
exert control at a level of complexity that no human-made system can rival,
as far as I know.
