What I did was to add files to
/etc/vservers/<vservername>/interfaces dir; basically copying like so:
cp -r /etc/vservers/<vservername/interfaces/0/ /etc/vservers/ <vservername/interfaces/1/
and then editing the ip and mask files in "1".

Some of my servers have 4 different ips set up this way.
