I am sure there is more than one way to skin a cat, but this is what I
do.
Running Mail 1.3.2 on OS 10.3.2 with the In mail box open, select
View>Customise Toolbar.
There are several tools that you can drag up to the tool bar that will
help.
The Junk tool sets up a Junk Box that can be "trained" to automatically
filter out known Junk as well as
all mail from sources not recorded in your Address Book etc.
There are many controllable options for this as you may already know.
For more details go to the Mail Help Menu.
Next, in the tool options there are Go Offline and Go Online tools.
They can allow you to sort Junk without
automatically opening it. Drag them into your Toolbar.
When your new mail is delivered, select > Offline and sort anything to
Junk that is suspect. This teaches Junk what you think is
Spam.
Next (still Offline) open the Junk Mailbox and open anything you think
is OK and tell Junk that it is OK by clicking the Junk tool
again (which has now changed to a Not Junk Tool).
You can tell Junk when and how to delete the real Junk by opening
Mail>Preferences>Junk Mail. You can also open
Mailbox>Erase Junk Mail and delete it manually.
This should help solve your problem.
However, I also use Little Snitch 1.1rc1 which tells you who wants to
phone home to mother. It won't let them until you
approve. It's interesting to see how often applications like Stuffit
check automatically
for upgrades etc. (fair enough but it's nice to Know). A Little Snitch
