I am glad you mentioned this Neil because I had this exact problem
yesterday and thought it must have been a problem with my drive. I
had ten music cds to import, the first four worked fine and after that
I had the same problem you did. I am on iTunes 8.0.1.

- sometimes iTunes goes ahead and imports OK
- other times the CD just unmounts - ie it doesn't mount in iTunes
