Stuart,

You need a neat (and free) Safari plugin called Glim - download and
install from here:
http://www.machangout.com/

Once installed, use Safari, Preferences and open the Glim tab, then
Add a new search engine Google AU using this setting:
http://www.google.com.au/search?q=#query#
(the #query# will be there for you)

All done, now you can select Google AU as your default search engine -
along with many other search engine options that are surprisingly
useful when available from the default Safari search field.
