If by Office 2004 you mean you were using Entourage then no I don't think so
as Entourage keeps them all in a database that pretty much only it can open.
I would import them all into your new Outlook.
Once you are sure you also have a backup of the old stuff too, you have
already said that you do, you could remove the old database but I wouldn't
especially bother unless it was more than say a couple of GB.
It's all in ~/Documents/Microsoft User Data/Office 2004 Identities/

You should be :-) Individual emails could be saved as PDF. Documents can go
straight onto a DVD.

That's just the software, more important is what you do with your old
database. If it fits, the Office 2004 Identities folder could go on a DVD.
If you wanted Outlook to import it later it could get it from that DVD.
