Hi Brian,

Basically what you have said is correct.
Open iTunes Preferences - Devices - then under Devices delete the last backup 
(which you did ) of the new iPhone today - then Click Ok.

Connect your iPhone - Then select your iPhone under Library - Devices
And "Restore from Backup" and select the backup you want of your old iPhone 

Wait until your iPhone is fully restored. It will restart when ready.
Keep it connected to iTunes to sync any data that wasn't stored in your backup 
(like apps, music and video). You can check which data is synced through the 
syncing tabs in iTunes.
