Thanks Ronni, it would seem that in the absence of a 6S or 6S Plus
(I have an inherited 5S)  there is no way to make a PDF of an email
_on an iOS device_. I've looked at the features of 3 or 4 of the App
Store PDF creators and not one of them explicitly states the ability
to make a PDF of an email is one of it's built in features. Perhaps
there is one that does it. I will leave it there for now. Thanks for
feedback as usual.

 I wish Apple had never decided to pull the 'Print to PDF’ app that
Steve Jobs announced back in 2011 from the App Store :(   
When Apple introduced AirPrint to iOS, they made it incredibly easy
to send files right from your iPhone, iPod touch, and iPad to any
compatible Wi-Fi printer in the vicinity.  Unfortunately, what Apple
didn't do was bring 'Print to PDF' (Export as PDF) along for the
ride. 
 There are 'Print to PDF' apps in the App Store that offer some form
of the same, but I’ve never found one as good as the original
‘Print to PDF’ - which was an app that runs a virtual print server
on your iPad or iPhone. Any time you choose to print, in any app that
can send documents to AirPrint, you can instead pick 'Print to PDF' as
a destination.

 I must be missing the point here… You mentioned you can print PDFs
remotely, so why not ‘Export as PDF' a mail message you wish to
print?
