1)  When you first launch Word (no matter how you launch it) Word's "Current 
Folder" will be read from Word>Preferences>File Locations>Documents.  If that 
entry is blank, it defaults to the System "Documents" folder for the logged in 
user.

2)  If you open a document by double-clicking in the Finder, "Save" will save 
the document to its existing folder.  Save As will assume you want to change 
folder and point you to the Word's default folder as set in 
Word>Preferences>File Locations (usually Documents).

When you open a document with the Finder, Word "gets sent" the document, it 
doesn't get told where the document came from, so it does not update its 
current folder.

3) When you save the first document, Word updates its "Current Save Folder" to 
the location you save the document in, and remembers it;

4) For the second and subsequent documents, it will offer the folder where you 
saved the first document.  This will continue, updating the Current Save Folder 
whenever you save a document into a different folder, until you quit Word.

5)  If, instead, you launch Word and then use File>Open from within Word to 
open your documents, now Word DOES know where it got the document from, and so 
it updates its Current Save Folder immediately.

If you use Save As after number 5, Word will offer the folder from which you 
opened the document.
The above behaviour is what it has always been in Mac Word: slightly different 
from PC Word.  The PC sends Word the file location whenever you double-click a 
document, so Word updates its Current Save Folder immediately, always.
