You can set the browser as invisible after launching the browser
(from http://wtr.rubyforge.org/rdoc/1.6.5/classes/Watir/IE.html#M000266):

browser = Watir::Browser.new
browser.visible=(0)

Not sure if that's what you're looking for, tho.  Hope it helps.
