I assume since Aunt Bee was an excellent cook (pickles not included) she knew when you take any roast out of the oven, it's best to let it sit/rest 20 minutes before it is carved/served. Otherwise most the juices will run out of the meat. That's why it didn't burn Andy and why he could hold it with his hands.
