David - I typically haven't had to provide mail server or a password, only in cases where I wanted to specifically use a certain mail server. Say you are hosting with provider a, and for whatever reason you don't want to use what they offer to send messages, you can then specify a mail server name to send the messages through a remote server. Depending on the security of that mail server, you may need to provide authentication information.
