[GLib] Use the GLibExtras.h wrappers at the call sites that still unwrap
typed strings

Since 322216@main the variadic wrappers accept GMallocString and
ASCIICString, and GMallocString converts to UTF8CStringView, but a few
call sites still unwrapped their strings with .utf8() or .data() to call
g_build_filename() and g_variant_new() directly. Use gBuildFilename() and
gVariantNew() there, so that the arguments are type checked and the join
results are held in a GMallocString.
Where the joined path ends up in a UTF8CString, build it from the
GMallocString span instead of calling unsafeFromUTF8() on a raw pointer,
which also avoids measuring the string again.
No change in behavior.
