i guess it depends on how you are deploying. we deploy on amazon ec2, so we just boot an brand shiny new ec2 instance and build it up with the new version of our apps, then whack it behind the apps elastic load balancer. the new ec2 instances start to pick up sessions whilst the old ones wind down.
