First, does WebObjects work with Leopard.

Yes. Leopard comes with 5.4. As Pascal said, if you can, stick with 5.3 for now. You can obtain 5.3 by downloading old xCode versions from the Apple Developer site (2.*). Anyway, you can still use 5.4 for learning, it's not *that* broken! :) It's just the normal bugs for a .0 release.

Second, any tutorial or book recommendation would be most appreciated.

Besides the tutorials and podcasts people recommended you, I strongly suggest you to read the Entreprise Objects guide (download the PDF and print it, or use a Kindle!): <http://developer.apple.com/ documentation/WebObjects/Enterprise_Objects/About/ chapter_1_section_1.html>.
