Details:
It is not possible to define a value for "logger.mask.irc" (and presumably
related settings) that includes date information. I tried setting it to
"$server/%Y-%m-%d/$channel.log", but the only thing this accomplished was to
literally create "~/.weechat/logs/freenode/%y-%m-%d/#weechat.log".
