If you can find out if the Acurites have a USB connection you can connect it right up to the Raspi and be in business. If they don't, I don't know how you'd do it. I have one of the older 5 in 1s and it has a USB output that I use with a Raspi 2 and Weewx.
By the way, you can pretty much ignore the displays. You're going to get something much better with Weewx if you set it up the way you like it. If I had to do it all over again, I wouldn't buy a weather station. I'd buy the sensors and connect them to the PI.
