Wow. Thanks for the answers... almost six years later!

At the time I ended up writing the Rails plugin here:

https://github.com/kete/convert_attachment_to

It relies on a number of open source command line tools to get the job
done. Though limited by being able to handle docx.

Quite long in the tooth at this point. Open source contributions to bring
it into the modern age encouraged. It's still in use by the Kete project.
