What about enabling it by default in new wiki?

Indeed. Due to the breakage that is likely to be inflicted on wikis that
are not prepared for the new wikitext preprocessor (it changes some
things about how wikitext is interpreted and can break some templates)
we decided not to enable it by default. If you're curious about how
certain templates and pages will appear in the new preprocessor you can
use the http://www.wikia.com/wiki/Special:ParserDiffTest/<page title> .
Once you and your community are confident things won't break, just let
us know and we can turn on the new preprocessor :)
