Following the instructions on https://github.com/wmde/wikibase-docker/blob/master/README-compose.md:

1. git clone https://github.com/addshore/wikibase-docker.git
2. docker-compose pull
3. docker-compose up --no-build -d

Last time I did (approx. 3 weeks ago), this was sufficient to launch a new wikibase instance.
