At the bottom you should see buttons and a drop down list. But it is probably found more than one place. I have set my left pane to be the "folder list" and removed just about most of the buttons but there is a "show more" buttons, "show fewer" and other options so you can play to your heart's content... or at least until Billy G's heart is content.
Diane mentioned that if you have the "mail" view you can not remove the "favorites box" but I have changed my OL2K3 to folder view and it almost looks like what I liked in OL2K. I'm on a 98SE machine with OL2K right now else I'd give you exact wording for all the places to look.
