I was thinking of cameras I have seen for professional
360* panoramas.

Now that you mention the software part again and ignore the camera
I also remember seeing somewhere where there is a site for stitching together
large numbers of pictures (something like what NASA does with
ones of the earth) and you wind up with a VERY wide angle single
picture...

I really did not think of that at first because they "generally" were showing
pictures that had people looking "out" into the distance, NOT back at
a central object...  Plus is was not exactly what you wanted...
Now if I could just remember what that site was called it would be a lot
more helpful...   Maybe if you searched with lots of the keywords about
you could find something like that or that site.

Sorry I cant remember more, but instant recall has been getting slower and
slower.
