Well, it's fixed. Turned out to be the Cat5 wire between the CPE and Radio. (The only part we didn't touch / install.)
That part was "subbed" out to a local and very reputable cabling company. Never had a problem with their work, so we didn't question it. That, and it worked ok for hours at a time..... Weird....
