I use RAID 5 with a hot spare on all servers. I backup to online service once a week Sat Night (changes only). But Backup to eSata HD nightly. 800 Mbs image transfer compared to 1-2 Mb with online upload backup if you're lucky. Full server image backup with verify and SQL. <30min with open files.
