Dependencies can be an issue at install time. If the service is dependent on:
1) An assembly being installed to the GAC or 2) C++ runtime support being installed at the same time with a merge module and you're on Vista or Server 2008 3) Any dependency that isn't actually present on a clean machine that you may have overlooked installing as a prerequisite or merge module. Then the service can fail to start. WiX really should error out if it's not set. I think you've made a common mistake - the Name element is the name of the service.
