I also have a variant on this recipe called "Holy Stew" that was passed among the clergy of various parishes in the Chicago area in the fifties and sixties. The long, low-temp cooking permitted a busy cleric to start dinner before he left early in the morning, come home once to check on it, and have a meal ready to serve a group of friends by evening.
