Spinach Salad with Garlic-Infused Dressing 1 bag of baby or flat-leaf spinach, washed and torn 1 red large onion, sliced 2 medium tomatoes, sliced or quartered 2-3 mandarins, sectioned 1-2 handfuls alfalfa sprouts 3 hard-boiled eggs, sliced 1 handful almonds (to taste) Dressing: 1/4 cup extra virgin olive oil 2-4 garlic cloves, minced (to taste) In a sealable container, combine the olive oil and garlic, stir, seal and refrigerate (at least 2 hours).In a large bowl, add the spinach, onion, tomatoes, mandarins, eggs, sprouts and almonds.
