CRISP OVEN-FRIED CHICKEN - DIABETIC 2 egg whites or 3 T no-cholesterol real egg product 4 t (2%) milk 2 skinless, boneless chicken breast halves ½ t salt ½ C finely crushed corn flakes cereal ¼ C dry unseasoned bread crumbs ¼ t dried rosemary leaves, crumbled ¼ t dried thyme leaves cooking spray salt and pepper to taste Beat egg whites and milk in shallow bowl until blended. Coat chicken breasts with flour; dip in egg mixture, then coat generously with combined corn flakes, bread crumbs and herbs. Spray baking pan with cooking spray. Place chicken in baking pan; spray generously with cooking spray and sprinkle lightly with salt and pepper. Bake at 350°F until chicken is browned and juices run clear, 45 to 60 minutes.
