Sautéed Apples over Ice Cream

1 T. butter
1 1/2 cups sliced peeled Fuji apple
1 T. sugar
3 T. brandy
1/4 t. fresh lemon juice
1/8 t. ground ginger
1 cup vanilla reduced fat ice cream

Melt butter in a small nonstick skillet over medium heat. Add apple, cook 5
minutes or until lightly browned, stirring frequently. Add sugar, brandy,
juice and ginger. Cook over medium low heat 2 minute or until apple is
tender, stirring occasionally. Serve warm over ice cream. Makes 2 servings.
