Matterhorn Meatloaf
Ingredients
1-1/2 lb. ground beef
1-1/2 cups each fresh breadcrumbs; shredded aged Swiss cheese, divided
1 cup milk
1/2 cup each chopped onion, raisins
1 egg
1 tsp. salt
1/4 tsp. pepper
Directions
Heat oven to 350º F. Combine all ingredients except 1/2 cup
cheese; mix lightly. Place mixture in 9x5" loaf pan. Bake at 350º F.
1 hour 30 minutes. Sprinkle with remaining cheese; return to oven
until cheese melts.
Makes 6-8 servings.
