Carrot cake since 1981 3 cups grated carrots 2 cups sugar 1 1/2 cup oil 2 tsp. soda 1 tsp. vanilla 4 eggs 2 cups flour 1 tsp. salt 1 tsp. cinnamon 1 cup nuts. 1 cup raisins (optional) Mix carrots, sugar, flour, eggs and oil. Add vanilla, soda, cinnamon, salt, nuts, and raisins. Beat well. Bake at 350 degrees F for 50 minutes.
