LEMON CURD
 
This is a very nutritious food, Basically it is a custard made with lemon
juice and should be cooked as carefully, preferably in a double boiler or
over very low heat. Some recipes contain cornflour and these are best suited
to being used at onces in a lemon meringue pie or lemon curd tartlets
 
Lemon curd  1
 
125ml butter (1/2cup butter)
375ml sugar(1 and a half cups)
2 lemons , grated rind and juice
2 eggs beaten
 
Method,    melt the butter and sugar over low heat, and stir in the lemon
juice and rind,  
Add a few spoonsful of the hot mixture to the eggs and stir these into the
hot mixture, Heat, stirring constantly ,until thick, 
Cool and bottle
 
LEMON CURD  2
 
530ml sugar,(2cups, plus 6 teaspoons)
125 ml butter
4 lemons ,juice and grated rind
4 eggs beaten
 
Method,  Put the sugar, butter ,strained lemon juice and rind into the top
of a double boiler,  heat it gently over boiling water, stirring until the
sugar and butter are melted.  Add the eggs, cooking and stirring well.  When
the mixture in moderately thick pour it into jars.   Cool under a cloth
before capping
