Baked Apples with Raisins

2 apples 
1 Tbsp. raisins 
Orange juice 
Pinch ground cinnamon 

Peel and core the apples. Coat with the orange juice on the outer 
surface. Stuff with the raisins. Sprinkle on the cinnamon.  Place in 
Pyrex baking cups. Bake in a 350 F oven for 25-30 minutes, or until fork 
pierces surface easily. Serve warm or cold.  Serves 2

Fast Coffee Cake

1 cup pancake mix
1/2 cup sugar
1 egg
1/2 cup milk
1 Tbsp. oil

Topping: 1/4-cup brown sugar, 1/2 tsp cinnamon, 1 Tbsp pancake mix

Grease 8-inch pan.  Mix all basic ingredients and put in pan.  Combine 
topping ingredients and sprinkle on top.  Bake at 400 for 20 minutes.

RICE PUDDING
 
Cook the following ingredients for 25 minutes:

1 cup rice
2 1/2 quarts water
1/2 tsp. salt

Wash rice in cold water after cooking.  Shake until dry.  Put in a large 
pan and add: 1 quart milk plus 1 can evaporated milk.  Heat this until 
warm, not hot.

Blend the following ingredients with a mixer:

1 cup sugar
2 large eggs/3 small eggs
2 tbsp. cornstarch

Add this mixture to the warm milk/rice. 

Cook until thick.  Add vanilla to taste, usually 3-4 tsp.  Top with 
cinnamon.  Refrigerate.

KLADDKAKA - Gooey Chocolate Cake

100 g butter
2 eggs
1 1/4 c. sugar
2 tsp. vanilla sugar
1/2 c. + 2 Tbsp. flour
4 Tbsp. cocoa

Melt butter, let cool slightly. Beat eggs, sugar and vanilla sugar until 
thick, add butter. Sift flour and cocoa and fold into the egg mixture.

Pour into a greased cake pan (20cm wide).

Bake at 150C for 25-40 (according to your preferred gooeyness) until the 
cake is set near the edge but still wobbly in the middle.

Let rest at least 12 hours before serving.
