Now, the latest .pot file is for 2.1 Beta2 in svn

Will you prepare .pot files for 2.1 rc1 and the other release candidates?
And will the .pot file for 2.1 stable be available before the stable
release?

The pots are now there.
On the second question - there haven't been any string changes since
the beta stage, so there would not be more than one or two
modified/added strings to translate.
